Consolidated Restaurant Operations (CRO) offers several dining concepts on its menu. The company operates and franchises about 120 casual and upscale dining restaurants, including its flagship concept El Chico. The chain offers traditional and contemporary Mexican cuisine through about 100 locations. CRO's other concepts include Cantina Laredo, Cool River Cafe, Good Eats, and III Forks. Most of its restaurants operate in Texas and about a dozen other mostly southern states. CRO is controlled by John Harkey, who started the restaurant business in 1998 with partners Gene Street and John Cracken.
