These cluckers have soaked in the flavor of the islands. Pollo Operations, a subsidiary of quick-service restaurateur Carrols Restaurant Group, operates more than 90 Pollo Tropical grilled chicken outlets located primarily in south Florida. Its restaurants serve grilled chicken that is marinated with tropical spices and fruit juices, along with such Caribbean side dishes as fried bananas, yucca, and black beans and rice. It also offers salads and dessert items. In addition to its company-owned locations, Pollo Tropical has about 30 franchised outlets in Puerto Rico and Ecuador. The chain was started by Larry Harris in 1988.
