Red Hot & Blue Restaurants operates and franchises about 35 barbecue joints in Virginia, Texas, and more than half a dozen other states. Its menu boasts a variety of beef, chicken, and pork dishes, as well as sandwiches and appetizers. Most locations also offer a take-out menu and catering services. Sauces and seasonings are sold through the company's Web site. Founded in 1988, the chain was the brainchild of former congressman Don Sundquist, who later became Tennessee's governor. The company was acquired in 2006 by a private equity group led by CEO John Walker called Dancing Pigs.
